Texas-Inspired Sausage Quiche

I am partnering with @incredibleegg , supported by the Texas Poultry Federation, which represents Texas egg producers, to create a Texas-inspired sausage quiche packed with spicy sausage, inspired by Texas’ love for bold and flavorful dishes, along with bell peppers and American cheese, which are commonly found in Tex-Mex cuisine.
Eggs are one of the most versatile ingredients you can keep in your kitchen, making them perfect for everything from quick breakfasts to hearty brunch dishes like this quiche. They are also a high-quality source of protein, containing all nine essential amino acids that help support muscle growth and repair.

Ingredients
8 oz spicy breakfast sausage
1 green bell pepper, diced
1 red bell pepper, diced
½ onion, diced
6 large eggs
1 cup half-and-half
½ cup milk
1½ cups shredded cheddar cheese (or a cheddar-mozzarella blend)
½ teaspoon salt
½ teaspoon garlic powder
1 premade pie crust
Oil spray

Instructions
Preheat the oven to 375°F.
In a large bowl, whisk together the eggs, half-and-half, milk, salt, and garlic powder until smooth. Set aside.
Spray oil on the large cast iron skillet. Add the spicy sausage and cook for 6–8 minutes, breaking it into crumbles, until browned and fully cooked.
Transfer the sausage to a paper towel-lined plate to drain any excess grease.
In the same skillet, sauté the onion, green bell pepper, and red bell pepper for 5–7 minutes, or until softened.
Press the pie crust into a lightly greased 9-inch cast iron skillet.
Evenly layer the cooked sausage over the pie crust, followed by the sautéed vegetables.
Sprinkle cheese over the filling.
Pour the egg mixture evenly over the top, then finish with more cheese.
Bake for 40–45 minutes, or until the center is just set and lightly golden.
Let the quiche cool for 10–15 minutes before slicing and serving.

What a full-circle moment! I made a @nekoyubu_atx video in Dallas about a year ago, and now they’ve opened a location in Austin!

If you haven’t tried Neko Yubu, they specialize in inari and have 8 different flavors to choose from. They also have a drink menu with options like matcha, so you can grab a drink to go.

Definitely excited to have them in Austin!

* ¼ cup soy sauce
* 1 tbsp Shaoxing wine
* Chili flakes, to taste
* ½ tsp Chinese five-spice powder
* 4 cloves garlic, minced
* 2 tbsp brown sugar
* ½ tbsp rice vinegar
* Cornstarch slurry (½ tbsp cornstarch mixed with water)

* sesame seeds
