Hearty Lasagna Soup

A cozy and comforting lasagna soup made with savory ground beef, rich tomato broth, tender lasagna noodles, and a creamy three-cheese topping. All the classic flavors of lasagna in an easy one-pot soup.

Ingredients

  • 1/2 onion
  • 6 cloves garlic
  • 3/4 lb ground beef
  • 2 tbsp tomato paste
  • Chili flakes
  • Salt and pepper
  • 1/2 tbsp Italian seasoning
  • 1 tsp oregano
  • 1/2 tbsp garlic powder
  • 1 jar marinara sauce
  • 7 cups chicken broth
  • Fresh parsley
  • Spinach
  • 9 lasagna sheets broken into four pieces
  • 10 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Parmesan cheese
  • Fresh parsley
  • Salt and pepper

Instructions

  • Heat a drizzle of oil in a pan over medium heat.
  • Add chopped onions and sauté until translucent.
  • Stir in minced garlic and ground beef, breaking up the meat as it cooks.
  • Season to taste, then mix in tomato paste and cook until the beef is browned.
  • Pour in chicken broth and marinara sauce, stirring to combine.
  • In a separate bowl, mix ricotta, mozzarella, Parmesan, chopped parsley, salt, and pepper until well combined.
  • Add broken lasagna noodles to the soup and cook until al dente.
  • Stir in fresh spinach and a splash of heavy cream.
  • Ladle the soup into bowls and top each serving with a generous spoonful of the cheese mixture.
  • Garnish with extra parsley and enjoy!
