Hashbrown Avocado Toast with Chili Oil Eggs

A twist on the classic avocado toast using hashbrown patties.

Ingredients

  • Frozen hashbrowns like Trader Joe’s patties
  • 1 ripe avocado
  • 2 eggs
  • Chili oil
  • Salt to taste

Instructions

  • Air Fry the Hashbrowns Preheat your air fryer to 400°F.. Air fry the hashbrowns for 10–12 minutes, flipping halfway, until crispy and golden.
  • While the hashbrowns cook, heat a drizzle of chili oil in a nonstick pan over medium heat. Crack in the eggs and cook sunny side eggs.
  • Once the hashbrowns are done, place them on a plate. Spoon avocado directly onto each hashbrown and mash it gently with the back of the fork. Sprinkle with a pinch of salt.
  • Top with Eggs
  • Carefully place the chili oil-fried eggs on top of the mashed avocado layer.
  • Serve & Enjoy
