This easy Air Fryer Teriyaki Salmon Bites recipe is packed with the sweet, iconic teriyaki flavor!

Teriyaki Origin
Teriyaki comes from two Japanese words: “teri,” meaning shine, and “yaki,” meaning broiled. The teriyaki cooking style originated in Japan during the 1600s. This cooking method allowed the fish to have a sweet and savory flavor while maintaining a glossy appearance from the glaze. Teriyaki-style cooking is often used on fish like salmon or eel.
Air Fryer Teriyaki Salmon Bites Ingredients
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 tbsp mirin
- 1 tbsp rice vinegar
- 3 garlic cloves, minced
- 1 tsp grated fresh ginger
- 1/2 tbsp cornstarch
- Sesame seeds (optional)
Instructions
In a bowl, combine the soy sauce, brown sugar, mirin, rice vinegar, minced garlic, and grated ginger.

Cut the salmon into bite-sized pieces.

Add the salmon to the sauce mixture. Cover and refrigerate for about 20 minutes.

Remove the salmon pieces from the marinade and place them in the air fryer. Cook at 385°F for 6-8 minutes, or until the internal temperature reaches 145°F.

Meanwhile, pour the remaining marinade into a pan. Heat over medium heat and add a cornstarch slurry (mix the cornstarch with a small amount of water first). Let it simmer until thickened.

Assemble your bowl with rice, your favorite veggies, and the teriyaki salmon bites. Drizzle with the thickened sauce and enjoy!
Storage Tips
Let the salmon bites cool to room temperature. Store them in an airtight container in the fridge for up to two days. To reheat, cook the salmon bites in the air fryer at 375°F for around 3–5 minutes, shaking halfway through.
