Trader Joe’s Chimchurri Shrimp Bowl Ingredients
- 2 cups rice
- 1/3 cup diced onion
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp chicken bouillon
- 1 tsp onion powder
- 2 bay leaves
- Juice of 1 fresh lime
- Chopped cilantro (to taste)

- Shrimp (peeled and deveined)
- Sweet corn (fresh, canned, or frozen)
Instructions
IIn a rice cooker, combine rice, water (per your rice cooker’s instructions), diced onion, minced garlic, olive oil, chicken bouillon, onion powder, and bay leaves. Cook until done.

Once the rice is fully cooked, remove the bay leaves. Stir in fresh lime juice and chopped cilantro. Mix well and set aside.

In a bowl, combine shrimp with Trader Joe’s Chimichurri Sauce. Toss until evenly coated and let it marinate for 5–10 minutes (or longer if you have time).

Heat a drizzle of olive oil in a pan over medium heat. Add the marinated shrimp and cook for 2–3 minutes per side, or until fully cooked and opaque.

In a serving bowl, layer the cilantro lime rice, chimichurri shrimp, and your veggies of choice — I love adding sweet corn for a pop of sweetness and texture.
