Trader Joe's Chimchurri Shrimp Bowl

This easy Trader Joe's shrimp bowl is made with the prepackage chimchurri sauce.

Ingredients

  • 2 cups rice
  • 1/3 cup diced onion
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tsp chicken bouillon
  • 1 tsp onion powder
  • 2 bay leaves
  • Juice of 1 fresh lime
  • Chopped cilantro to taste
  • Trader Joe’s Chimichurri Sauce
  • Shrimp peeled and deveined
  • Sweet corn fresh, canned, or frozen

Instructions

  • In a rice cooker, combine rice, water (per your rice cooker’s instructions), diced onion, minced garlic, olive oil, chicken bouillon, onion powder, and bay leaves. Cook until done.
  • Once the rice is fully cooked, remove the bay leaves. Stir in fresh lime juice and chopped cilantro. Mix well and set aside.
  • In a bowl, combine shrimp with Trader Joe’s Chimichurri Sauce. Toss until evenly coated and let it marinate for 5–10 minutes (or longer if you have time).
  • Heat a drizzle of olive oil in a pan over medium heat. Add the marinated shrimp and cook for 2–3 minutes per side, or until fully cooked and opaque.
  • In a serving bowl, layer the cilantro lime rice, chimichurri shrimp, and your veggies of choice — I love adding sweet corn for a pop of sweetness and texture
