Cook scrambled eggs and set aside. Air fry the bacon (or cook using your preferred method).
Make the sauce by mixing plain Greek yogurt, onion powder, and lemon juice. This is what I used, but you can swap it for any sauce of your choice.
Cut a slit from the edge of the tortilla to the center.
In the first quadrant, add avocado slices and mash with a fork.
In the second quadrant, add scrambled eggs.
In the third quadrant, spread the sauce and top with sliced tomato.
In the last quadrant, add bacon slices (cut them if needed so they fit).
Fold the first quadrant over the second, then over the third, and finally over the fourth.
Pick it up and pan-fry until the bottom is toasted. Flip and repeat on the other side.
