Pat the chicken wings completely dry with paper towels. Removing as much moisture as possible will help the wings get extra crispy.
Add the onion powder, paprika, and MSG to the wings. Sprinkle in the cornstarch and toss until the wings are evenly coated.
Arrange the wings in a single layer in your air fryer basket. Air fry at 400°F for 20–25 minutes, flipping halfway through, until golden brown and crispy.
While the wings are cooking, add the fish sauce, minced garlic, water, sugar, and lime juice to a pan. Bring to a gentle simmer and cook for about 8–10 minutes, stirring occasionally, until the sauce thickens slightly and becomes glossy.
Add the crispy wings to the pan and toss until they're completely coated in the sticky fish sauce glaze.
Sprinkle with fresh parsley and serve immediately with rice or your favorite carb.
