Vietnamese Fish Sauce Chicken Wings

These crispy fish sauce wings are coated in a sweet, garlicky, tangy glaze that’s packed with umami. Air-fried until golden and tossed in a sticky fish sauce glaze, these addictive “crack wings” are perfect with rice or your favorite carb.

Ingredients

  • Chicken Wings
  • 2 lbs chicken wings
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp MSG or salt
  • 1 tbsp cornstarch
  • Fresh parsley chopped, for garnish
  • Fish Sauce Glaze
  • 2 tbsp fish sauce
  • 4 cloves garlic minced
  • 2 tbsp water
  • 2 tbsp sugar
  • 1 tbsp fresh lime juice

Instructions

  • Pat the chicken wings completely dry with paper towels. Removing as much moisture as possible will help the wings get extra crispy.
  • Add the onion powder, paprika, and MSG to the wings. Sprinkle in the cornstarch and toss until the wings are evenly coated.
  • Arrange the wings in a single layer in your air fryer basket. Air fry at 400°F for 20–25 minutes, flipping halfway through, until golden brown and crispy.
  • While the wings are cooking, add the fish sauce, minced garlic, water, sugar, and lime juice to a pan. Bring to a gentle simmer and cook for about 8–10 minutes, stirring occasionally, until the sauce thickens slightly and becomes glossy.
  • Add the crispy wings to the pan and toss until they're completely coated in the sticky fish sauce glaze.
  • Sprinkle with fresh parsley and serve immediately with rice or your favorite carb.
