Tomato Burrata Pasta

A refreshing and fragrant pasta dish topped with a cheesy whole burrata.

Ingredients

  • 8 oz spaghetti
  • 1 burrata
  • 1 pint cherry tomatoes halved
  • 5 cloves garlic minced
  • 1 tsp salt
  • ½ tsp red pepper flakes
  • ½ cup reserved pasta water
  • Fresh basil leaves chopped
  • Freshly grated Parmesan cheese

Instructions

  • Cook the spaghetti noodles in a pot according to package instructions. Reserve ½ cup of pasta water.
  • Drizzle olive oil into a pan and add garlic. Sauté for 1 minute or until fragrant.
  • Add the halved cherry tomatoes to the pan, along with salt and red pepper flakes. Cook the tomatoes for about 5-7 minutes, until they begin to soften.
  • Add tomato paste and stir until well combined.
  • Pour in the reserved pasta water and cook until the sauce has melded together.
  • Add the cooked noodles to the tomato sauce and stir until completely coated.
  • Stir in fresh basil leaves and freshly grated Parmesan cheese.
  • Plate the pasta and garnish with whole basil leaves.
  • Add the burrata cheese on top.
  • Enjoy!
