Small Batch Ube Horchata

This small-batch ube horchata is creamy, refreshing, and lightly sweet with a delicious ube flavor. Made with blended rice, milk, sweetened condensed milk, and ube extract, it is an easy homemade drink that’s perfect served chilled over ice with a sprinkle of cinnamon.

Ingredients

  • 1 cup uncooked white rice
  • 2 cups hot water
  • 2 cups water
  • 1/2 can sweetened condensed milk adjusted to taste
  • 1 cup milk
  • 1 tsp vanilla extract optional
  • 1 tsp ube extract or more to taste
  • Cinnamon to taste

Instructions

  • Rinse and drain the rice, then add it to a bowl with the hot water. Let the rice soak for several hours, or until softened.
  • Transfer the soaked rice and water to a blender. Blend until the rice is broken down and the mixture looks milky.
  • Strain the mixture through a fine-mesh sieve or cheesecloth, pressing out as much liquid as possible. Discard the rice solids.
  • Stir in the milk, sweetened condensed milk, vanilla extract, ube extract, and cinnamon. Taste and adjust the sweetness and ube flavor as desired.
  • Refrigerate until completely chilled.
  • Pour over ice and garnish with a sprinkle of ground cinnamon. Enjoy!
