Rice Cooker Mushroom Rice Recipe

You don't have to settle for plain rice every time you use your rice cooker. This easy rice cooker mushroom rice is packed with rich umami flavor from soy sauce, mirin, chicken powder, and shiitake mushrooms. With minimal prep and hands-off cooking, it's a delicious side dish that pairs well with almost any protein.

Ingredients

  • 2 cups rice
  • 2 cups water
  • cups shiitake mushrooms sliced
  • ½ tbsp chicken powder
  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • Green onions sliced
  • Sesame oil
  • 1 tbsp Shallot

Instructions

  • Add rice to the rice cooker pot. Rinse and drain the rice until the water runs mostly clear.
  • Add water, chicken powder, soy sauce, mirin, shallots, and a drizzle of sesame oil. Mix until the seasonings are combined.
  • Place the sliced shiitake mushrooms evenly on top of the rice.
  • Cook the rice.
  • Once the rice is cooked, fluff with a rice paddle and mix the mushrooms throughout.
  • Top with sliced green onions.
