Pepper Lunch Rice Cooker

A quick and flavorful one-pot rice cooker meal with tender marinated beef, sweet corn, and onions, finished with butter and green onions for a savory, comforting dish.

Ingredients

  • Thinly sliced beef
  • 2 cups rice
  • ½ onion thinly sliced
  • ½ cup corn
  • 3 cloves garlic minced
  • 1 tbsp honey
  • 4 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp mirin
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tbsp butter
  • Chopped green onions for garnish

Instructions

  • In a bowl, marinade beef with garlic, honey, soy sauce, oyster sauce, mirin, onion powder, and black pepper. Let it marinate while you prepare the rice.
  • Rinse 2 cups of rice in the rice cooker pot. Add the appropriate amount of water back to the pot.
  • Layer the sliced onions over the rice. Place the marinated beef on top, then add the corn.
  • Start the rice cooker and let it cook until done.
  • Once the rice is ready, open the cooker and add butter and chopped green onions. Gently mix everything together.
  • Scoop into bowls and enjoy warm.
