Peel (optional) and cut potatoes into fry shapes.

Drain and pat completely dry.

Air fry at 385°F for 25–30 minutes, shaking every 5 minutes for even crisping.
Heat a pan over medium-high heat.
Add ground beef and cook until browned, breaking it apart as it cooks.
Drain excess fat if needed.
Stir in taco seasoning and 2 tbsp water.
Cook for another 2–3 minutes until well coated and slightly saucy.
Blend avocado, Greek yogurt, lime juice, water, garlic powder, and salt until smooth and creamy.
Adjust water for desired thickness.
Add crispy fries to a plate.
Top with seasoned taco beef.
Place American cheese on top and microwave for ~10–15 seconds until melted.
Finish with diced tomatoes, onions, and cilantro.
Drizzle with avocado sauce.
