Whisk together the sugar and heavy cream until it forms soft peaks of whipped cream.
Next, lay a slice of bread on a piece of plastic wrap. Spread a thin, even layer of whipped cream on top of the bread.
Arrange the strawberries in a uniform direction on the whipped cream-covered bread, making sure they point in the same direction. Fill any gaps between the strawberries with more whipped cream. Place the second slice of bread on top.
Trim off the crust. Wrap the sandwich tightly in plastic wrap and refrigerate for a few hours, allowing the whipped cream to set.
Slice the sandwich diagonally for a long cross-section of strawberries
