Cook the rice. Once done, fluff it and mix in the sugar and rice vinegar.
Dice the Spam into small pieces.
Heat a pan over medium heat and cook the Spam until browned on all sides.
In a bowl, mix together the soy sauce, mirin, sugar, and oyster sauce until well combined.
Pour the sauce over the Spam and let it simmer until the sauce thickens and coats the Spam.
In an oven-safe baking dish, spread the seasoned rice into an even layer.
Sprinkle crushed seaweed over the rice.
Add an even layer of the saucy Spam on top and lightly press it down.
Bake at 375°F for 10 minutes.
Remove from the oven and top with more seaweed and sesame seeds.
Drizzle with Kewpie mayonnaise and serve!
