Ingredients

  • Shrimp
  • ½ lb shrimp peeled and deveined
  • Salt to taste
  • 1 –2 tbsp cooking oil
  • Fried Rice
  • 3 cups cooked jasmine rice preferably day-old
  • ¾ cup pineapple chunks
  • ¾ cup carrots finely diced
  • 2 eggs
  • 2 cloves garlic minced
  • ½ small shallot diced
  • ½ tbsp red curry paste
  • 1 tsp turmeric
  • 1½ tbsp soy sauce
  • 1 tbsp oyster sauce
  • ½ tbsp fish sauce
  • Thai chilies thinly sliced (optional)
  • Green onions chopped
  • Fresh cilantro for garnish

Instructions

  • Cook the shrimp: Season the shrimp with salt. Heat oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2–3 minutes per side, or until pink and cooked through. Remove from the pan and set aside.
  • Sauté the aromatics: Add a little more oil to the same pan. Add the shallots, garlic, and Thai chilies. Sauté for about 30 seconds until fragrant.
  • Cook the vegetables: Add the diced carrots and cook for 2–3 minutes until slightly tender.
  • Push the vegetables to one side of the pan. Crack in the eggs and scramble until just cooked.
  • Add the cooked jasmine rice and break apart any clumps with your spatula. Stir everything together.
  • Add the soy sauce, oyster sauce, fish sauce, turmeric, and red curry paste. Toss until the rice is evenly coated and the seasonings are well distributed.
  • Stir in the pineapple chunks and cooked shrimp. Toss everything together and cook for another 1–2 minutes until heated through.
  • Finish with chopped green onions and fresh cilantro. Serve immediately and enjoy!
  • Recipe tip: For the best fried rice, use cold, day-old jasmine rice. It has less moisture than freshly cooked rice, which helps keep the grains separate and gives you that classic fried rice texture.
