Preheat your oven to 375°F (190°C).
Slice the sweet potatoes in half lengthwise.
Drizzle generously with olive oil, making sure each piece is well coated.
Season with salt, garlic powder, and paprika (or your preferred spices).
Line a baking tray with parchment paper and place the sweet potatoes cut-side down.
Roast for about 45–60 minutes, or until the bottoms are deeply caramelized and the inside is tender.
Remove from the oven and let cool slightly before serving.
