To a pot, add water and Earl Grey tea bags. Bring to a gentle simmer and steep for 5 minutes.
Remove the tea bags, then stir in the rolled oats. Cook for 10–15 minutes, stirring occasionally, until soft and creamy.
Lower the heat and add a splash of milk, honey, cinnamon, and a little vanilla extract. Mix well until combined.
Pour into a bowl and top with fruit or your favorite garnishes.
