Preheat the oven to 375°F.
Add the cooked rice to a bowl and season with soy sauce and rice vinegar. Mix until the rice is evenly coated.
Spread the rice in an even layer on a parchment-lined baking sheet. Bake for 30–40 minutes, or until the rice is golden brown and crispy. Mine took about 35 minutes.
Let the crispy rice cool slightly, then break it into smaller pieces.
Pat the salmon dry with paper towels. Drizzle with olive oil and season with all-purpose seasoning, paprika, and onion powder. If your all-purpose seasoning is salty, you can use less or substitute with salt to taste.
Place the salmon in the air fryer and cook at 400°F for about 8–10 minutes, or until cooked through and the internal temperature reaches 145°F.
Use a fork to gently flake the salmon into smaller pieces.
Add the Greek yogurt, Kewpie mayonnaise, soy sauce, hot sauce, and onion powder to a small bowl. Mix until smooth and well combined.
Add the crispy rice and flaked salmon to a large bowl. Add the cucumber, avocado, and green onions.
Drizzle the creamy sauce over everything and gently toss until the ingredients are evenly coated.
Serve immediately and enjoy!
