Crispy Potato Pillows

Crispy potatoes with a soft and fluffy interior

Ingredients

  • 2 potatoes
  • ½ tsp salt
  • ½ tsp onion powder
  • ½ tsp black pepper
  • 2 tbsp glutinous rice flour
  • 1 tbsp potato starch

Instructions

  • Peel the potatoes and cut them into chunks.
  • Boil in water for 20-30 minutes or until fork-tender.
  • Drain and let them cool slightly.
  • Mash the potatoes until smooth.
  • Add salt, onion powder, black pepper, glutinous rice flour, and potato starch.
  • Knead until a soft dough forms.
  • Divide the dough into two equal portions and roll each into a log.
  • Cut the logs into even pieces.
  • Use a fork to gently press each piece, creating textured lines.
  • Heat oil to 325°F and fry for 5 minutes until lightly golden.
  • Remove and increase the oil temperature to 350°F
  • Fry again for 1 more minute until crisp and deeply golden.
