Crispy Air Fryer Potato Chunks

These crispy air fryer potato chunks are golden and crunchy on the outside, while staying fluffy and tender on the inside. The potatoes are briefly boiled with baking soda before being tossed in olive oil and a flavorful blend of spices, then air fried until perfectly crisp. They are easy to make, packed with flavor, and make the perfect side dish or snack!

Ingredients

  • Potatoes
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp all-purpose seasoning
  • 1 tsp cayenne pepper
  • ½ tsp Italian seasoning optional
  • Olive oil

Instructions

  • Peel the potatoes and cut them into chunky, bite-sized pieces.
  • Bring a pot of salted water to a boil and add a small amount of baking soda. Add the potatoes and boil for about 8 minutes, or until they are just fork-tender. Be careful not to overcook them.
  • Drain the potatoes and let them cool for a few minutes so some of the excess moisture can evaporate.
  • Transfer the potatoes to a large bowl. Gently shake or toss them until the edges become rough and slightly mashed. These rough edges are what help create that extra-crispy texture in the air fryer!
  • Drizzle the potatoes generously with olive oil, then add the salt, paprika, onion powder, all-purpose seasoning, cayenne pepper, and Italian seasoning.
  • Toss until the potatoes are evenly coated with the oil and seasonings.
  • Air fry at 400°F for about 20 minutes, shaking the basket halfway through. Cook a few extra minutes if you want them even crispier.
  • Remove from the air fryer and enjoy while hot and crispy!
