Peel the potatoes and cut them into chunky, bite-sized pieces.
Bring a pot of salted water to a boil and add a small amount of baking soda. Add the potatoes and boil for about 8 minutes, or until they are just fork-tender. Be careful not to overcook them.
Drain the potatoes and let them cool for a few minutes so some of the excess moisture can evaporate.
Transfer the potatoes to a large bowl. Gently shake or toss them until the edges become rough and slightly mashed. These rough edges are what help create that extra-crispy texture in the air fryer!
Drizzle the potatoes generously with olive oil, then add the salt, paprika, onion powder, all-purpose seasoning, cayenne pepper, and Italian seasoning.
Toss until the potatoes are evenly coated with the oil and seasonings.
Air fry at 400°F for about 20 minutes, shaking the basket halfway through. Cook a few extra minutes if you want them even crispier.
Remove from the air fryer and enjoy while hot and crispy!
