Chinese Steamed Eggs with Chili Oil

A spicier take on a Chinese Classic Dish

Ingredients

  • 2 eggs
  • Chicken bouillon or salt, to taste
  • ½ cup water 2:1 water-to-egg ratio
  • 1 green onion finely chopped
  • Soy sauce
  • Sesame oil
  • Chili oil

Instructions

  • Crack the eggs into a bowl.
  • Add the water and chicken bouillon (or salt). Whisk until fully combined.
  • Pour the mixture through a fine sieve to remove air bubble.
  • Cover tightly with plastic wrap and poke a few small holes to prevent condensation.
  • Place in a steamer over medium heat and steam for 12-15 minutes or until just set.
  • Remove from heat, top with chopped green onions, and drizzle with soy sauce, sesame oil, and chili oil.
