In a pot, drizzle some oil and add the chopped onions. Sauté until translucent. Add the ground beef, breaking it apart as it cooks. Cook until browned.
Add the tomato paste, seasonings, and San Marzano tomatoes breaking the tomatoes down as they cook. Let it simmer for about 15 minutes, or until the chili thickens.
Cook the hot dogs in a pan and toast the buns.
Place the hot dogs in the buns, top with a generous layer of chili, and sprinkle shredded cheddar cheese on top. Add sliced jalapeños if you want a spicy kick.
