Heat a small pan over medium heat and drizzle in a generous splash of olive oil.
Slice or gently tear the dates in half and remove the pits.
Place the dates cut-side down in the pan. Cook until they become soft, golden, and caramelized. Flip and lightly sear the other side.
Remove from heat and let them cool slightly.
Spoon Greek yogurt into a bowl and top with the warm caramelized dates.
Drizzle with a little fresh olive oil or use the flavorful date-infused oil left in the pan.
Finish with a pinch of flaky salt.
