Prepare the noodles according to package instructions. Drain and set aside.
In a small bowl, whisk together dark soy sauce, light soy sauce, oyster sauce, sugar, and a pinch of white pepper. Set aside.
Season the shrimp lightly with salt. Heat a drizzle of oil in a pan over medium-high heat. Cook shrimp for 1–2 minutes per side, until pink and just cooked through. Remove from the pan and set aside.
In the same pan, add butter. Once melted, sauté garlic and green onions until fragrant.
Add the cooked noodles to the pan. Pour in the sauce and toss until noodles are evenly coated.
Return the shrimp to the pan and gently toss everything together.
Garnish with remaining green onions and a sprinkle of Parmesan cheese, if desired. Serve hot.
