* In a blender, combine shrimp, green onion, soy sauce, garlic, egg white, sesame oil, salt, MSG, and cornstarch. Pulse until a coarse paste forms. (Alternatively, finely chop the shrimp and mix with the seasonings by hand.)
* Spread half of the shrimp mixture evenly over one slice of bread. Place another slice of bread on top, pressing gently to seal. Repeat with the remaining filling and bread.
* Lightly spray the air fryer basket with oil. Place the shrimp toasts inside and spray the tops with more oil.
* Air fry at 375°F for 12–15 minutes, flipping halfway through, until the shrimp filling is fully cooked and the bread is golden.
* Serve hot with sweet chili sauce or spicy mayo for dipping.
