Remove the husks and silk from the corn. Bring a pot of water to a boil and boil the corn for 2–3 minutes. Remove and let cool slightly.
Cut each ear of corn in half crosswise. Carefully cut each half into two long strips to create the corn ribs.
In a small bowl, mix together the olive oil or melted butter, Cajun seasoning, paprika, and onion powder. Brush the mixture evenly over each corn rib.
Air fry at 400°F for 10–12 minutes, shaking halfway, until the edges are browned and slightly curled.
While the corn is cooking, mix Greek yogurt with onion powder, lime juice, and Cajun seasoning. Adjust the seasoning to taste.
Remove the corn ribs from the air fryer and sprinkle with Parmesan cheese. Garnish with fresh parsley and serve with the creamy Cajun sauce.
