Air Fryer Corn Ribs

These crispy air fryer corn ribs are seasoned with Cajun spices, topped with Parmesan and parsley, and served with a creamy, tangy Cajun yogurt sauce.

Ingredients

  • 3 ears of corn
  • tbsp olive oil or melted butter
  • 1 tsp Cajun seasoning
  • 1 tsp paprika
  • 1 tsp onion powder
  • Parmesan cheese to taste
  • Fresh parsley for garnish
  • Creamy Cajun Sauce
  • Greek yogurt
  • ½ tsp onion powder
  • Lime juice to taste
  • Cajun seasoning to taste

Instructions

  • Remove the husks and silk from the corn. Bring a pot of water to a boil and boil the corn for 2–3 minutes. Remove and let cool slightly.
  • Cut each ear of corn in half crosswise. Carefully cut each half into two long strips to create the corn ribs.
  • In a small bowl, mix together the olive oil or melted butter, Cajun seasoning, paprika, and onion powder. Brush the mixture evenly over each corn rib.
  • Air fry at 400°F for 10–12 minutes, shaking halfway, until the edges are browned and slightly curled.
  • While the corn is cooking, mix Greek yogurt with onion powder, lime juice, and Cajun seasoning. Adjust the seasoning to taste.
  • Remove the corn ribs from the air fryer and sprinkle with Parmesan cheese. Garnish with fresh parsley and serve with the creamy Cajun sauce.
  • Enjoy!
