4 Ingredient Marshmallows

This easy homemade marshmallow recipe proves that just a few simple ingredients can create something truly special. By blooming gelatin and whipping it with a hot sugar syrup, you get marshmallows that are light, fluffy, and perfectly sweet with a hint of vanilla. After setting for a few hours, they slice beautifully and are ready to enjoy on their own, in hot chocolate, or toasted over a flame. A simple, satisfying treat that’s well worth the wait.

Ingredients

  • 1 cup water divided
  • 2 packets unflavored gelatin
  • 2 cups sugar
  • 1 tsp vanilla extract

Instructions

  • Bloom the gelatin by sprinkling it over ½ cup of water. Let sit for 10 minutes, then add to a mixing bowl.
  • In a saucepan, combine the remaining ½ cup water and sugar. Heat over medium heat until the syrup reaches 240°F.
  • Carefully and immediately pour the hot syrup into the gelatin.
  • Add vanilla and whisk (or beat) on high for about 10 minutes, until thick, fluffy, and glossy.
  • Transfer the mixture to a lightly greased or parchment-lined pan and smooth the top.
  • Let set at room temperature for at least 6 hours.
  • Slice, dust if desired, and enjoy!
