Bloom the gelatin by sprinkling it over ½ cup of water. Let sit for 10 minutes, then add to a mixing bowl.
In a saucepan, combine the remaining ½ cup water and sugar. Heat over medium heat until the syrup reaches 240°F.
Carefully and immediately pour the hot syrup into the gelatin.
Add vanilla and whisk (or beat) on high for about 10 minutes, until thick, fluffy, and glossy.
Transfer the mixture to a lightly greased or parchment-lined pan and smooth the top.
Let set at room temperature for at least 6 hours.
