Slice the apple thinly and remove the core.
Toast the coconut in a pan over medium heat until golden brown and fragrant.
Combine the toasted coconut and peanut butter in a bowl. Mix until fully blended.
Spread a layer of the coconut-peanut butter mixture over each apple slice.
Melt the chocolate chips and drizzle over the top of each apple slice.
Chill in the fridge until the chocolate hardens, then enjoy!
