For me, it’s hard to consume enough of my daily veggies, so when I saw the Veggies Made Great Blueberry Oat Muffins at Costco, I decided to give it a shot. This snack item is unique as it incorporates veggies in muffins. There are fresh zucchinis and carrots intertwined in the muffins. It is a great breakfast item compared to typical breakfast staples like sugary cereals, pancakes, etc. There are 20 muffins per box sold at Costco. These muffins were perfect! I find most grocery store muffins too sweet, but these fell right in my sweetness spectrum. The muffins were deliciously moist. You can’t even tell that there are veggies in the muffins because it becomes muted from the sweet blueberries. The zucchinis. and the carrots probably enhanced the moistness due to its water proportions. What surprised me was how each muffin was individually wrapped.
On the contrary, these muffins were a lot smaller than my expectations. I will probably need 2 of these muffins for breakfast to feel satiated till lunchtime. It’s not the most appealing-looking muffin, but it is much tastier than it looks.
