I had a few bananas that were super ripe. With its ongoing brown coloration, I didn’t find it appealing to consume. With that in mind, I didn’t want these bananas to go to waste. So what did I do? I made some banana bread.
I was running low on butter so I decided to substitute the butter for vegetable oil. Besides, cutting back on butter might be a positive attribute since it contains bad cholesterol. Next time, I want to try a banana bread recipe with olive oil.

Moist No butter Banana Bread Ingredients
1/2 cups brown sugar
1/4 cups vegetable oil
1.5 cups all-purpose flour
1 tsp baking soda
2 eggs
1 cup mashed bananas (~3 medium)
chocolate chips
chopped walnuts
Instructions
Step 1: Preheat the oven to 350 degrees. Spray the loaf pan generously with olive oil spray.
Step 2: In a large bowl, whisk the dry ingredients: flour, sugar, and baking soda. You can up the sugar level if you prefer sweeter baked goods.
Step 3: In a separate bowl, mash the bananas with a fork. Don’t overly mash the bananas.
Step 4: Mix the mashed banana mixture into the original bowl. Continue to mix in the oil and eggs.
Step 5: Pour in as much chocolate chips and walnuts as you desire.
Step 6: Bake for 70 minutes. Take a chopstick or toothpick and pierce it into the banana bread. If it doesn’t stick, then the banana bread is ready!
